Caveman Coffee is the smoothest coffee I have ever tasted.

No lie. No hyperbole. That was my first thought when I tasted the coffee. And every cup I have made since I have felt the same. Each and every coffee bean in the picture above was carefully accounted for to make sure not a single one was wasted.

According to Caveman Coffee’s website:

Each bean is grown under the UTZ certification and Rainforest alliance protocols for sustainability and natural growing practices. No pesticides are ever used on the plants, and they are watered by nature alone. They are hand picked, only when ripe, and wet-processed for drying. This process produces the highest quality dried beans for roasting.

Let’s talk cupcakes

This recipe uses the Cake Mix in a Jar I posted the other day but it is made with one very strong cup of coffee. You can get a printable version of the instructions here to attach to the jar.

I actually boiled 1 1/4 cups of coffee down to 1 cup to make it really strong. Then I topped them with a simple chocolate butter cream and sprinkles, because everyone loves sprinkles!

Mocha Cupcakes

Gifts in a Jar: Mocha Cupcakes. Homemade chocolate cake mix recipe made with coffee make delicious moist mocha cake.

Ingredients
  

  • 1 jar homemade chocolate cake mix
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup very strong brewed coffee

Instructions
 

  • Heat oven to 350°F. Line cupcake pans with wrappers.
  • Stir together the ingredients of the jar. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in hot coffee (batter will be thin). Pour batter into prepared pans.
  • Bake 20-25 minutes or until wooden pick inserted in center comes out clean.

Notes

The jar of cake mix referred to in the recipe is our homemade Chocolate Cake Mix in a Jar.
To prepare the jar, layer the ingredients in order in a 1 quart mason jar and attach the baking instructions (printable version here)
  • 2 cups sugar
  • 3/4 cups cocoa powder
  • 1 3/4 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

    Mocha is MY fall flavor (the hubs hates pumpkin, so we don’t pumpkin spice anything around here…)
