Mashed Banana, mashed banana…. oooops. Sorry if any of you now have that Wiggly Wonderful song stuck in your head. In honor of St. Patrick’s Day, I thought some potato recipes would be just the ticket in addition to some other Irish inspired favorites.
At the Humaciu house, I will be serving either Green Eggs and Ham (with spinach puree providing the green instead of food coloring) or Beet and Ricotta Pancakes with pureed spinach instead of the beets for breakfast. Dinner will be the American Irish tradition of Corned Beef and veggies (sans cabbage – not big cooked cabbage fans here) and Irish Soda Bread.
