    Spicy Black Bean Taco Wraps Make a Quick and Healthy Meal

    Spicy Black Bean Taco Wraps are a delicious vegetarian wrap perfect for Meatless Mondays, Lenten Fridays or when you want a quick and easy plant based meal.

    Whether you are a vegetarian, a spice lover, or simply looking for a new twist on the classic taco, these Black Bean Taco Wraps have something for everyone.

    Get ready to learn how to create this healthy recipe that cooks up in about 20 minutes making it perfect for Meatless Mondays, Taco Tuesdays, Lenten Fridays or any day you are craving some zesty tacos.

    What is not to love about this recipe? It is plant based (vegan), low fat, packed with flavor, very versatile (bonus points if you sang that last one like Gypsy Rose Lee), and it can be made up in about 20 minutes.

    Quick, easy, healthy and flavorful? Yes, please.

    Variations for Black Bean Taco Wraps

    By the powers vested in me by the internet, I hereby grant you permission to alter this to your tastes.

    Honestly, I could put that line on every recipe on this site. Take what you like and change what you don't to suit your dietary needs and desires.

    Instead of serving it as lettuce wraps:

    • wrap it in a corn or flour tortilla and chop the lettuce to add on top
    • chop the lettuce and make it a black bean taco salad
    • serve it over rice (plain white or this Spanish Brown Rice)

    Get creative with the ingredients:

    • use more or less spice
    • use pinto or red beans
    • leave out the cilantro
    • add corn or hominy with the beans
    • add shredded cheese
    • add leftover chicken, beef or pork
    • shake on some hot sauce
    • use premade guacamole
    • make some mango salsa, make a different kind, or use premade

    I hope you get the idea.

    Ingredients for Black Bean Taco Wraps

    • canned black beans
    • red bell pepper (or other color)
    • avocados
    • tomato
    • fresh limes
    • fresh cilantro
    • jalapeño pepper
    • Iceberg, butter, or Romaine lettuce leaves (for wrapping)
    • extra virgin olive oil (or other neutral oil)
    • spices: cumin, chili powder, smoked paprika, cayenne pepper, dried Mexican oregano*, salt and black pepper
    • salsa either homemade or store-bought

    * Mexican oregano is not the same as Mediterranean oregano (usually just labelled oregano). It has a sweeter more lemony taste than the minty Italian variety. If you can't find it, marjoram is a closer substitute than the other oregano.

    Ingredients
     

    Black Bean Filling Ingredients:

    • 2 tablespoons extra virgin olive oil
    • 15 ounce can black beans (drained and rinsed)
    • ½ medium red bell pepper (finely diced)
    • 2 tablespoons water
    • 1 teaspoons ground cumin
    • ½ teaspoon chili powder
    • 1 teaspoon smoked paprika
    • ¼ teaspoon cayenne pepper
    • ¼ teaspoon dried Mexican oregano
    • salt and pepper (to taste)

    Guacamole Ingredients:

    • 2 large ripe avocados (pitted)
    • 1 medium tomato (seeded and diced)
    • 3 tablespoon fresh lime juice
    • 2 tablespoon fresh cilantro (minced)
    • ½ medium jalapeño (finely diced)
    • salt and pepper (to taste)

    To Serve:

    • Iceberg, butter, or Romaine lettuce leaves for wrapping
    • Mango Salsa (see note)

    Instructions
     

    • Heat olive oil in a skillet over medium heat. Add beans, bell pepper, water, cumin, chili powder, smoked paprika, cayenne, and Mexican oregano. Season with salt and pepper, to taste, and stir to combine.
      2 tablespoons extra virgin olive oil, 15 ounce can black beans, 2 tablespoons water, 1 teaspoons ground cumin, ½ teaspoon chili powder, 1 teaspoon smoked paprika, ¼ teaspoon cayenne pepper, ¼ teaspoon dried Mexican oregano, salt and pepper, ½ medium red bell pepper
    • Cook, stirring occasionally, until the beans are warmed through and the spices become fragrant, around 4-5 minutes. Remove from heat and put in serving bowl.
    • While the beans are cooking, mash the avocado in a small bowl. Add tomato, lime juice, fresh cilantro, and jalapeño. Season with salt and pepper to taste, and stir to combine.
      2 large ripe avocados, 1 medium tomato, 3 tablespoon fresh lime juice, 2 tablespoon fresh cilantro, ½ medium jalapeño, salt and pepper
    • Serve beans, and guacamole with large lettuce leaves for wrapping and salsa.
      Mango Salsa, Iceberg, butter, or Romaine lettuce leaves for wrapping

    Notes

    Use this Mango Salsa recipe, or another homemade salsa recipe, or store bought.
