This recipe scales up easily for a party. I originally made it for a pot luck and served it in watermelon rind bowls as you can see from the photos. One less dish that had to be brought home and washed.
I like my fruit salad with relatively equal sized pieces. If you want larger melon chunks with smaller berries, feel free.
Ingredients
This is a salad, exact amounts are not necessary for a delicious dish. Mix and match your favorite melons and berries based on the your tastes and the seasonal availability of the fruit.
Feel free to get the fruit precut if you are pressed for time or don't want an entire watermelon.
In general, you will need:
- melon: watermelon, cantaloupe, honey dew, etc.
- berries: strawberries, blueberries, blackberries, raspberries, etc.
- orange
- rice wine vinegar
- fresh mint
Add other fruit, such as pineapple, grapes, apples, etc.

Recipe
Ingredients
- 8 cups melon (watermelon, cantaloupe, honeydew, etc.)
- 2 cups berries (strawberries, blueberries, raspberries, blackberries, etc.)
- 1 orange
- ΒΌ cup fresh mint (plus a few leaves for decoration if desired)
- ΒΌ cup rice wine vinegar (or other mild vinegar)
Instructions
- Remove seeds from melons and cut into bite sized pieces, reserve the juices in a small bowl. Place fruit in a large bowl.
- Cut large strawberries if needed. Add berries to the melon.
- Zest and juice the orange, cut a slice first for decoration if desired. Finely chop the mint, saving a few leaves for decoration. Combine orange juice, zest, mint and vinegar with the fruit juices in the small bowl.
- Pour dressing over the melons and berries and toss gently. Decorate with orange slice and fresh mint leaves. Cover and refrigerate until ready to serve.
