Or maybe you need an effortless appetizer for tail-gating parties and other informal gatherings.
Well, with a little help from your trusty slow cooker, this dream can become a reality. In this article, we will delve into the world of Slow Cooker Buffalo Chicken Dip, exploring its versatility as a crowd-pleasing appetizer or a satisfying weeknight meal.
So dust off your slow cooker and let's hop on the flavorful ride that is slow cooker buffalo chicken dip.
Is Buffalo Chicken Dip an appetizer or a meal? BOTH!
It works deliciously for either one. Serve it with some tortilla chips or carrot and celery sticks for a hot appetizer.
Or scoop it into some mini bread bowls for a hearty dinner. Or stick with the veggie sticks for a keto option.
Ingredients for Buffalo Chicken Dip
The ingredients are all easy to find in your typical grocery store:
- boneless skinless chicken breasts or thighs
- chicken broth
- cream cheese, blue cheese and mozzarella
- hot sauce, plus salt and pepper
- celery and jalapeno pepper
- optional: green onions or chives (for serving)
Buffalo sauce is supposed to be pleasantly spicy. So, I chose a mild sauce (like Tabasco, Frank's or Crystal) and use jalapeno peppers.
You can increase the heat of your final dish by choosing a hotter pepper sauce or by swapping the jalapeno for a spicier pepper like serrano or habanero.
Or, make it milder and serve hotter hot sauce on the side for those that want to kick it up a notch or twelve.
Instant Pot Buffalo Chicken Dip
If you don't want to wait for the slow cooker to slowly cook the chicken for hours and hours, use your pressure cooker.
Add the chicken, broth, hot sauce chopped celery and jalapeno pepper to the pressure cooker. Cook on high for 15 minutes, then quick release. Remove the chicken and shred.
Put the shredded chicken back in the pot with the cheeses. Switch your pressure cooker to sauté and mix everything together until the cheeses are melted and everything is nice and hot, about five minutes.

Ingredients
- 2 pounds boneless skinless chicken breasts or thighs
- Salt and black pepper (to taste)
- ½ cup chicken broth
- 3 stalks celery (very finely chopped)
- 2 packages cream cheese, 8 ounce size
- ¾ cup mild hot sauce
- 1 small jalapeno pepper (finely minced)
- 6 ounce crumbled blue cheese (divided)
- 1 cup Mozzarella cheese (finely shredded)
To Serve:
- 3 green onions (tops sliced (optional))
- 1 small jalapeno (sliced (optional))
Instructions
- Season chicken breasts with salt and black pepper, to taste. Add chicken, broth, celery, cream cheese, hot sauce, jalapeno pepper, and 4 ounces blue cheese to the crock of a 5 or 6-quart slow cooker.
- Cover and cook on high for 3-4 hours or 6-7 hours on low.
- 30 minutes before serving, remove lid and shred chicken using two forks. Add shredded Mozzarella cheese and stir to combine. Cover and continue cooking until cheese is completely melted.
- Garnish dip with remaining blue cheese, sliced green onions, or jalapeno, if desired.
- Serve warm with celery stalks and carrot sticks or in a bread bowl.
