This Caramel Fruit Cake is easy to make, just mix and bake.
Growing up this was called Eleanor Stone’s Fruit Cake. She was a friend of my grandparents, in case you were curious. Gluten Free Caramel Fruit Cake is a bit more SEO friendly.
This recipe isn't really a cake, but more of a caramelized confection.
- 1 can sweetened condensed milk
- 1 cup chopped nuts pecans, walnuts, almonds, etc.
- 1 cup shredded coconut
- 1 cup glace cherries
- 1 cup glace pineapple
- Preheat oven to 350 degrees. Line a cake pan with foil.
Combine all ingredients, pour into pan, bake for one hour. Cool completely, remove from pan, remove foil.
