    If you have a blender or food processor, hummus is a deliciously easy recipe to make at home. Just throw everything in and blend until it is nice and creamy.

    Hummus is not only easy, it is also versatile. Add in roasted garlic one time, some cooked beets the next, and the next time you can go with a traditional recipe and top it with tzatziki and fresh vegetables for a Mediterranean 7 Layer Dip.

    Many Ways to Serve Hummus

    Here in the US, hummus is mostly served as a chip or veggie dip. But, in the Middle East it is usually served with fresh pita, falafal, shish kebab, etc. as more of a side dish than a dip.

    Use it as a spread for sandwiches or wraps instead of mayonnaise or mustard.

    Smear it on toast - amazing with fresh tomatoes or avocado.

    Add it to pasta, cooked vegetables, scrambled eggs.

    You can even used as a salad dressing for a green salad or potato salad.

    Recipe

    Ingredients
     

    • 15 ounce can chickpeas (drained with liquid reserved)
    • Β½ cup cooked spinach
    • 6 tablespoons tahini
    • 3 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 1-2 cloves garlic
    • ΒΌ cup green onion tops (chopped)
    • ΒΌ cup roasted red pepper (chopped)
    • salt and pepper to taste

    Instructions
     

    • In a blender or food processor, add chickpeas, spinach, tahini, lemon juice, olive oil and garlic.
    • Pulse a few times, then scrape down. Blend until mixture is an even creamy texture. Thin with reserved chickpea liquid if needed. Taste, add salt and pepper as needed.
    • In a small bowl combine green onion tops and roasted red peppers. Fold half of this into the hummus. Use the remainder for decorations on top before serving.
