This Tropical Watermelon Cucumber Salad is a refreshingly healthy treat for hot summer days. And best of all it comes together in just a few quick minutes.
This bright crisp salad is the perfect side for a variety of summer meals. Take it to a barbecue, serve it with grilled chicken or burgers. Or make an entire meal out of it like I did.
The amounts below are estimates, I didn't actually measure anything when I threw this together. Use more watermelon if you like more watermelon, more arugula if you want it more vegetable salad like instead of more fruit salad like. The plate makes a nice presentation, but if you want to make it simpler, just toss everything together in a bowl and serve.

Tropical Watermelon Cucumber Salad

Ingredients
- 3 cups watermelon
- 1-2 medium cucumbers
- 2 cups arugula
- 1 lime
- ½ cup shredded coconut
Instructions
- Cut watermelon into bite sized pieces.
- Peel and thinly slice cucumbers.
- Zest the lime.
- Arrange arugula on a plate and top with watermelon and cucumber.
- Drizzle lime juice over the salad, sprinkle with lime zest and coconut. Serve.
