Tomato and Celery Soup is a simple homemade tomato soup with chopped celery added in for extra crunch.
I am not a big fan of canned soups, especially condensed ones. Making soup at home is so easy, usually healthier, and the taste is so much BETTER.
This recipe is a spin off of a braised celery recipe I made recently. We were in the midst of a week-long rain pattern and I wanted a little bit more comfort instead of a healthy side dish. Same great taste and still healthy, even with the pinch of brown sugar.
Recipe
Ingredients
- 1 teaspoon olive oil
- 2 cloves garlic (chopped)
- 1 tablespoon fresh oregano leaves (chopped)
- 1 tablespoon fresh rosemary leaves (chopped)
- 1 tablespoon fresh parsley (chopped)
- 15 ounces low sodium organic tomato sauce
- 3 cups celery, thinly sliced or chopped
- 2 cups chicken or vegetable stock
- 1 tablespoon brown sugar
- salt and pepper to taste
Instructions
- In a skillet heat olive oil over medium heat and saute garlic for about 1 minute. Add herbs and saute another minute.
- Stir in the tomato sauce. Add celery and stir to coat.
- Cover and reduce heat to medium low. Simmer about 10 minutes, stirring about halfway through.
- Add brown sugar and stock. Continue simmering until celery is done to your liking.
- Add salt and pepper to taste.
