I love to cook, but some nights we are too busy or it is too hot and I need a little help to get dinner on the table quickly. Enter the humble store-bought rotisserie chicken. Rotisserie chicken is my go-to easy meal. We have a Ron Popeil cooker, so as long as I think about this meal in time to take the chicken out of the freezer to thaw, I can just set it & forget it & be done!
