Home made jams (or jellies or preserves) are wonderful. But, most traditional recipes have one flavor: sweet fruit. The addition of fresh tangerines and vanilla extract add so much more to the overall taste.
The first thing you taste is the sweet figs, and then you get the hit of the vanilla and then the surprise of the tangerine. YUM!

How to Use Tangerine Vanilla Fig Preserves
Sure, preserves are great on toast in the morning, but don't limit yourself to that when they are so many more ways to enjoy them:
- with a cheese plate or charcuterie tray
- as a glaze for chicken, turkey, ham, pork, etc.
- mix with oil and vinegar to make a salad dressing
- heated on a wheel of brie
- add to a grilled cheese sandwich
- on top of a cheesecake
- filling or topping for a cake
- instead of syrup for pancakes, waffles or French toast
- top ice cream for a fruity fig sundae

Melissa's Produce and Taylor & Colledge
I made these Tangerine Vanilla Fig Preserves with tangerines and figs from Melissa's Produce and vanilla extract from Taylor and Colledge.
If you don't have a fig tree, pick up some Melissa's at your grocery store when they are in season. They were sweet and firm and just perfect for this recipe. As were the tangerines.
Taylor and Colledge makes some of my favorite extracts, including the vanilla bean paste used in this recipe (as well as almond, lemon, lavender, peppermint and coconut)

Recipe
Ingredients
- 2 teaspoons grated tangerine zest (3-4 tangerines)
- ½ cup freshly squeezed tangerine juice
- 3 ¾ cups sugar
- 1 teaspoon vanilla extract
- 2 pounds fresh ripe purple figs (stems removed and quartered or roughly chopped)
Instructions
- Place 3 metal tablespoons in the freezer.
- In a medium heavy-bottomed pot, combine all ingredients. Mixture will be dry.
- Cover and bring to a boil over medium heat. Stir the mixture and boil hard for 1 minute, stirring to dissolve the sugar.
- Lower the heat, and simmer for 50 minutes, stirring occasionally.
- Remove one spoon from the freezer Add a small amount of the cooked preserves to the frozen spoon to cool it. Mixture should be thick and starting to gel like jelly.
- If the mixture is still syrupy keep cooking and test again in 5 minutes. If the liquid is too firm, add more tangerine juice or water, cook for 1 minute, and test again.
- Store in a mason jar or other container in the refrigerator.
