These grilled pork riblets are marinated in a flavorful spicy sweet and salty marinade then grilled up quickly for a delicious meal in about 30 minutes.
This recipe is basically Korean Galbi that I made with pork instead of the traditional beef flanken cut ribs. If you don't eat pork, use beef instead.
If you start the marinade the night before or first thing in the morning these are definitely weeknight fast. Start some rice then heat up the grill and you'll have dinner in 30 minutes.
What type of ribs are Pork Riblets?
I used button ribs aka flat bone ribs aka Applebee's riblets, but you can also use traditional cut riblets (which are pork spare ribs cut in half to make shorter ribs).
Or use a half slab of ribs, but know they may take longer to cook.

Other Ingredients for Asian Pork Riblets
The ingredients for the marinade are pretty basic.
- soy sauce ( I use low sodium tamari sauce)
- brown sugar (light or dark)
- rice wine vinegar (or other mild vinegar)
- sesame oil
- green onion
- garlic (crushed)
- fresh ginger
The one item you may not be familiar with is sambal oelek. It is a spicy chili paste. It can be found in the Asian food items of most major grocery stores, or order online.
You can use garlic chili sauce instead. Garlic chili sauce is milder and sweeter and has garlic so you may want to adjust the other ingredients slightly if using it.

- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 1-2 green onion (thinly sliced, greens reserved for garnish)
- 3 cloves garlic (crushed)
- 1 tablespoon minced fresh ginger
- 1-2 teaspoons sambal oelek
- 3-4 pounds pork riblets
Instructions
- In a medium bowl, combine all marinade ingredients.
- Add marinade and riblets to a large zip to lock bag. Let marinade at least 4 hours up to overnight.
- Grill riblets over medium high heat for 15 minutes. Turn over and continue cooking until they reach and internal temperature of 140℉, about 15 more minutes. Remove from grill.
- Cover ribs with foil and allow to sit for 10 minutes, then serve.
