If you are looking to spice up your next party, may I suggest this amazingly flavorful cheesy Hot Artichoke Dip.
This spicy dip is a family tradition, served at most holiday meals I can remember.
I recently made it with fresh artichokes from my garden using the baby artichokes as well as 4 or 5 large ones that should have been picked weeks before I did. A quick trim of all of the tough outer leaves as well as the choke and the tender leaves and hearts were ready to go. I ground them up in the food processor then added a little olive oil, lemon and garlic like I did in this marinated artichoke recipe, before I added in the rest of the ingredients for this recipe.
Whether you use canned or fresh artichokes, this recipe is so easy and so delicious.
Tips and Ingredients for Hot Artichoke Dip
My aunt always made a bowl (or two) of this and just heated it up in the microwave as guests began arriving. No need to spend anymore time in the kitchen on party day than necessary.
We've always had it with tortilla chips, but it would also be delicious in a bread bowl with extra bread for dipping.
The ingredients are simple:
artichoke hearts in water: find with the canned vegetables
marinated artichoke hearts: usually in a jar with the canned vegetables
diced green chilies: same aisle as above
mayonnaise
cheddar cheese or other good melting cheese if you prefer
Recipe
Ingredients
- 14-15 ounce can artichoke hearts
- 14 ounce jar marinated artichokes or hearts
- 7 ounce can diced green chilis
- 2 tablespoon mayonnaise
- ¾ cup grated cheddar cheese
Instructions
- Drain the artichokes and chilis. Pulse in a food processor until finely chopped. Add cheese and mayonnaise.
- Heat in microwave until warm and serve with tortilla chips.
