Some recipes dip the stuffed peppers in batter and fry them, but that's such a mess.
This is a simpler version... wrapped in bacon! You can use any bacon you like: pork, turkey, beef, or even tempeh. That smoky crunchy taste pairs wonderfully with the cheese and peppers.
Tips for Making Jalapeno Poppers
Jalapeno peppers can vary quite a bit in size. Choose peppers that are all roughly the same size.
The cheese mixture puffs up a bit while baking. Be sure not to overstuff the peppers or the cheese may overflow onto the baking sheet.

Ingredients
- 12 medium jalapeño peppers
- 8 ounces cream cheese (room temperature)
- 1 cup cheddar cheese (finely shredded)
- 1 teaspoon garlic powder
- salt and pepper (to taste)
- 12 slices bacon (cut in half)
- 2 tablespoon fresh parsley or cilantro leaves (finely chopped)
Instructions
- Pre-heat oven to 375°F. Line a large, rimmed baking sheet with a piece of parchment paper or silicone baking mat.
- In a medium mixing bowl, combine cream cheese, cheddar cheese, and garlic powder. Season with salt and pepper, to taste, and stir to combine.
- Cut each jalapeño in half lengthwise and remove the seeds.
- Fill each pepper half with some of the cheese mixture and wrap with one-half slice bacon. Secure bacon with a toothpick and place on baking sheet.(If prepping ahead, cover the baking sheet and refrigerate until ready to bake.)
- Bake until the cheese mixture is golden-brown and bubbly, and the bacon is cooked through, approximately 20-25 minutes. Rotate the baking sheet once halfway through cooking to ensure even browning.
- Remove the poppers from the oven, transfer to a serving platter. Garnish with fresh chopped parsley or cilantro and serve immediately.
