I love a good macaroni salad, but I wanted something a little extra recently. A little leftover turkey and cheddar cheese got me thinking about a club sandwich all it needed was a little bacon... which makes everything better.
I added a little green onion to mine, which isn't part of the classic club sandwich. And I left out the bread, lettuce and little toothpicks to hold it all together.
What is the Best Pasta for Macaroni Salad?
The key to picking a pasta for macaroni salad is to chose a shape that will hold the dressing and complement the size of the other ingredients. While salad macaroni would work for some salads, I think it is too small in this case.
Some popular macaroni choices I recommend for this salad:
- elbow macaroni
- medium shells
- orecchiette
- cavatappi (which is what is in the photographs)
Fusilli, rotini, farfalle, and penne could also work but I think the others fit the ingredient shapes better. But, use what you like and you have on hand.

The ingredients for this salad are a combination of macaroni salad and a turkey club sandwich (minus the the bread and lettuce):
Besides the pasta mentioned above, you will also need:
- cooked bacon
- cooked turkey (or chicken)
- cheddar cheese
- cherry tomatoes
- green onions or parsley (for garnish)
- mayonnaise or ranch dressing
The amounts below are estimates and should be used as a starting point. Like any salad, adjust it to your tastes.

Ingredients
- 8 ounces uncooked elbow macaroni (see blog text above for alternatives)
- 4-6 ounces cooked turkey (cut in small chunks)
- 4 ounces Cheddar cheese (cut in small chunks)
- 1 cup cherry tomatoes (quartered)
- Β½ - ΒΎ cup ranch dressing (or mayonnaise)
- 2-3 green onions - green part only (chopped)
Instructions
- Cook pasta per package directions, drain and rinse under cold water to stop cooking. Drain thoroughly.
- In a large bowl, combine pasta, turkey, bacon, cheese and tomatoes.
- Add Β½ cup dressing to pasta and stir gently. Refrigerate at least one hour before serving.
- Before serving, add extra dressing if needed. Top with chopped green onion tops.
