The key to crispy grilled potatoes are to cut them thinly and watch carefully because the line between crispy and burnt is pretty thin. You can use any variety of potatoes for these you prefer including sweet potatoes/yams. As you can see from the photos I even threw on some carrot "fries".
Recipe
Ingredients
Vegan Buttery Mayo Sauce
- 1 cup vegan mayonnaise
- 2 tablespoons Barleans Butter Flavored Coconut Oil (melted)
- 1 tablespoon chopped fresh herbs (such as chives, rosemary, oregano, basil)
Potatoes
- 1 pound potatoes
- 2 tablespoons Barleans Butter Flavored Coconut Oil (melted)
- 2 tablespoons chopped fresh herbs (such as chives, rosemary, oregano, basil)
- salt and pepper to taste
Instructions
- Preheat grill to 400 degrees.
- In a small bowl, combine sauce ingredients and set aside.
- Wash potatoes, peel if desired, and slice very thin.
- In a large bowl, toss sliced potatoes with melted coconut oil, herbs and salt and pepper. Place in a single layer on a vegetable grilling pan (see notes)
- If possible, grill over indirect heat. Otherwise watch carefully to prevent scorching. Grill potatoes about 5-7 minutes then flip over and continue grilling until crispy
- Serve hot with sauce on the side.
