    Maple Roasted Salmon Healthy Weeknight Fast Meal

    Maple Mustard Roasted Salmon Fillets have a spicy sweet glaze to pair with the velvety salmon. A healthy meal in under 30 minutes.

    Weeknight meals don't need to be boring or unhealthy. This flavor packed Maple Roasted Salmon combines just a few simple ingredients into a delightful main dish ready in under thirty minutes.

    This salmon recipe is incredible simple, mix a few ingredients, spread it on the salmon and roast. Boom, dinner is served. Whatever you are serving with it will probably take longer to prepare.

    Most people automatically think of honey as a balance to mustard, but this recipe uses real maple syrup. The sweet and spicy contrast nicely with each other and pair perfectly with the rich salmon fillets

    Ingredients for Maple Mustard Salmon

    The ingredients are in the name: maple syrup, mustard and salmon fillets

    You want to use real maple syrup made from the sap of maple trees for this recipe, not corn syrup flavored with maple extract. Yes, it is more expensive. But the taste is so much better.

    You can use any mustard you prefer. A creamy Dijon will create a smoother texture. But, if you like the extra bite of coarse ground mustard you could use that. My guys would snub it right away if they saw the tell tale signs of mustard on it. No neon yellow or mustard seeds in my house.

    As for the salmon, opt for wild Pacific (Alaskan) salmon versus Atlantic whenever possible. All Pacific salmon is wild while Atlantic salmon is almost all farmed. Both are healthy for you. But Pacific salmon are not endangered, and the Atlantic farming practices are not that great for the environment. Get more info at Eating Well.

    Ingredients
     

    • 2 tablespoons Dijon mustard
    • 2 tablespoons pure maple syrup
    • 4-6 wild-caught Alaskan center-cut salmon fillets (about 6 ounces each)
    • salt and pepper (to taste)

    Instructions
     

    • Preheat oven to 400℉. Place a wire rack in a roasting pan.
    • Combine the mustard and maple syrup in a bowl. Put the salmon fillets on the prepared baking rack and season with salt and black pepper, to taste.
    • Spread the mustard maple mixture on each salmon fillet. Place in pre-heated oven and roast until almost cooked through, approximately 12 minutes.
    • Turn the oven to broil, and broil for 1-2 minutes to caramelize the top.

      Thank you for hosting! This is what I featured the week of 12-23 to 1-3 on my blog. On Tuesday morning was an IHop Spinach and Mushroom Omelette Knockoff.
