What's do you think of making when you have very ripe bananas sitting on the counter? Banana Bread? Banana N'ice Cream? These waffles are a wonderful choice.
I usually bake up a double batch and freeze the leftovers in a single layer on a baking sheet. Then I store them in the freezer in a zip to lock bag so my teen can pop them in the toaster oven for an easy breakfast on school mornings.
Ingredients for Banana Waffles
The ingredients for the basic waffles are pretty simple:
- baking mix
- very ripe banana
- milk (your favorite kind)
- egg
- vegetable oil
- optional mix ins: mini chocolate chips, chopped nuts, brown sugar
- optional for serving: maple syrup, chocolate syrup, whipped cream, nuts, banana slices
I used my homemade baking mix for this, but you can use a store-bought mix (Bisquick, Jiffy, pancake mix, etc.). Or add the following to the recipe instead of the baking mix:
- 1 cup flour
- 1 Β½ teaspoons baking powder
- ΒΌ teaspoon salt
- ΒΌ cup shortening/butter
Variation: Banana Pancakes
If you want to make banana pancakes instead of banana waffles, just omit the oil and cook on a hot griddle until golden on each side.

Ingredients
- Β½ cup very ripe banana (approximately 2-3 bananas)
- 1 cup baking mix
- Β½ cup milk
- 1 large egg
- 1 tablespoon oil
Optional add ins:
- 2 tablespoons chopped walnuts
- 2 tablespoons mini chocolate chips
- 1 tablespoon brown sugar
Instructions
- In a small bowl, or food processor/blender, thoroughly mash banana. Combine with all other ingredients until just
- blended. Bake in waffle iron according to manufacturer's directions. Makes 3-4 8 inch waffles.
- For pancakes, omit the oil and cook on hot griddle.
