Everything old is new again. The Waldorf Salad was originally popular in the 90's... 1890's that is. It has had a few resurgences over the years, including the 1930's thanks to a line in Cole Porter's "You're the Top" and in the 1970's when I was growing up.
Here's to hoping this lovely concoction is ready for another bout of popularity.
How to Serve Waldorf Chicken Salad
This can be served as a salad, wraps or a sandwich. I love it with croissants or ciabatta rolls (if you shop at Costco you know the ones I mean). But, then again, I like any sandwich on those.
For lettuce wraps, use butter, bibb or romaine lettuce. You could also use tortillas, naan, pitas, lavash or other flatbread if you don't mind some carbs.
Or serve it on a bed of lettuce as a salad.
Ingredients for Waldorf Chicken Salad
The original Waldorf Salad only had 4 ingredients: celery, apples, mayonnaise and lettuce. This recipe adds a few more, but all are easy to find and may already be in your kitchen:
- cooked chicken, great use for leftovers
- celery
- apples, any variety you like
- grapes, any seedless variety you prefer
- walnuts, or other nuts
- mayonnaise, regular or vegan, vegetarian, low fat, etc.
- plain yogurt, Greek, no fat, low fat, regular, etc.
- lemon juice
- honey, or other liquid sweetener (sugar is okay, but it could be gritty if it doesn't dissolve completely.
- salt and pepper to taste

Dressing
- ½ cup mayonnaise
- 2 tablespoon plain yogurt
- 1 tablespoon lemon juice (more or less to taste)
- 1 teaspoon honey
- salt and pepper (to taste)
Chicken Salad
- 1 cup cooked chicken (diced)
- 1 medium apple (diced)
- 1 medium celery rib (sliced)
- 1 cup red seedless grapes
- ¾ cup coarsely chopped toasted walnuts
- lettuce, bread or rolls (for serving)
Instructions
- In a mixing bowl, combine dressing ingredient.½ cup mayonnaise, 2 tablespoon plain yogurt, 1 tablespoon lemon juice, 1 teaspoon honey, salt and pepper
- Mix chicken, apple, celery, grapes, and nuts in the bowl with the dressing.1 cup cooked chicken, 1 medium apple, 1 medium celery rib, 1 cup red seedless grapes, ¾ cup coarsely chopped toasted walnuts
- Serve with lettuce as a salad or lettuce wraps, or on bread or rolls as a sandwich.
