    Watermelon Goat Cheese Bites are a perfect appetizer with the crisp juicy watermelon, creamy goat cheese, peppery basil, crunchy pistachios and a drizzle of balsamic glaze.

    This simple recipe combines flavorful ingredients like juicy watermelon, creamy cheeses, peppery basil, crunchy pistachios and a hint of balsamic vinegar in an eye-catching (but easy) presentation.

    You may be wondering if these Watermelon Goat Cheese Bites are an appetizer, a salad or a light summer lunch? All of the above.

    In the Lalanne clan they can even be a dessert. Yes, we like cheese and fruit for dessert (or before dessert). It's a French thing.

    If you are serving these for a party, you can prep the individual ingredients ahead of time. But, wait until just before serving so the the watermelon juices don't seep into the cheese.

    Ingredients for Watermelon Goat Cheese Bites

    The ingredients for this should be fresh, so save the recipe for summer time when ripe watermelon and basil abound.

    • ripe seedless watermelon
    • fresh basil
    • cream cheese
    • goat cheese
    • half & half or milk
    • balsamic vinegar
    • pistachios

    There are a few variations you may want to try like switching the melon variety, I think cantaloupe would be pretty. As for the herbs, besides basil, tarragon is the best substitute I can think of other than edible flowers perhaps. You could use another nut, but the color of the pistachios just looks so nice with the brightly colored melon.

      cheesy watermelon and basil appetizers

      Ingredients
       

      • 1 seedless watermelon
      • 8 ounces cream cheese (softened)
      • 8 ounces goat cheese (crumbled)
      • 3 tablespoons half & half (or milk)
      • ⅓ cups balsamic vinegar
      • 12 fresh basil leaves (stems removed)
      • ⅓ cup pistachios (chopped)
      • small fresh basil leaves (optional for garnish)

      Instructions
       

      • Remove all rind from watermelon. Cut 24 2-inch squares approximately ⅓-inch thick.
        1 seedless watermelon
      • Place cream cheese, goat cheese, and half & half in a mixing bowl and beat with a hand mixer until mixture is light and fluffy.
        8 ounces cream cheese, 8 ounces goat cheese, 3 tablespoons half & half
      • Heat balsamic vinegar in a small saucepan over medium-high heat. Bring to a gentle boil, stirring occasionally, and cook until the liquid is reduced by one half.
        ⅓ cups balsamic vinegar
      • Drizzle about half of the balsamic glaze onto a serving platter and carefully arrange half of the watermelon squares on top.
      • Transfer some of the whipped cheese to a pastry bag fitted with a large tip (or use a plastic sandwich bag with one of the bottom corners removed). Pipe some whipped cheese onto each watermelon square on the platter and top each with some fresh basil.
        12 fresh basil leaves
      • Place another slice of watermelon on top of the basil and gently press down to secure. Top each appetizer with some of the remaining whipped cheese. Sprinkle with chopped pistachios.
        ⅓ cup pistachios
      • Serve immediately garnished with small sprigs of fresh basil and a light drizzle of the remaining balsamic glaze.
