    Tequila Grilled Shrimp Skewers Quick Meal or Appetizer

    Shrimp is a great weeknight meal choice because they are so quick cooking and don't need to "rest" afterwards like meats. Start the shrimp marinating then heat up the grill and make up your sides while you wait then cook and serve immediately.

    If you want these for a party appetizer or to take to the stadium for tailgating, you can prep the marinade ahead of time and put in a zip to lock bag. Wait to add the shrimp until 30-60 minutes before cooking. Because of the lime juice, marinating longer could make them a bit tough once grilled.

    What kind of shrimp should I use for skewers?

    You can use pretty much any size or type of shrimp you prefer for this, except cocktail shrimp. Even small or medium shrimp can be a bit too small for this. Large or bigger is better.

    As for the peel, do what you want. I prefer peeled because there is less mess for the diners. Some like unpeeled or tail on. Depending on how you plan on serving them having to remove the peel could be distracting.

    Does the alcohol cook off?

    No. While the shrimp will not absorb the full amount of alcohol in the marinade, these only cook for a few minutes so the alcohol that is absorbed will not have a chance to cook off much.

    If that is a concern. use an alcohol free Tequila such as Ritual Proof or Free Spirits.

    Ingredients for Tequila Shrimp Skewers

    The ingredients are pretty straightforward:

    • shrimp - see notes above
    • tequila - any variety including non-alcoholic
    • lime juice - lemon is an okay substitute, lime is better
    • shallots and garlic cloves
    • olive oil - or other neutral oil
    • cumin, salt and pepper

    Additionally you will need some skewers, either wooden or metal, 8 inch are good for appetizers, 10 inch or longer for meals.

    When using wooden skewers, particularly single use bamboo ones, you will want to soak them in water for at least 30 minutes. I put them in a tall glass or rimmed pan where they can lay flat and fill with water.

    This helps them slide into the shrimp without splitting and prevents them from burning on the grill.

    Recipe

    Ingredients
     

    • ½ cup tequila
    • ¼ cup lime juice
    • 2 medium shallots (chopped)
    • 2 medium cloves garlic (minced)
    • 2 teaspoons ground cumin
    • salt and pepper (to taste)
    • ½ cup olive oil
    • 2 pounds large peeled shrimp

    Instructions
     

    • In a medium non-reactive bowl, combine tequila, lime juice, garlic, shallots, cumin, and salt and pepper.
      ½ cup tequila, ¼ cup lime juice, 2 medium shallots, 2 medium cloves garlic, 2 teaspoons ground cumin, salt and pepper
    • Whisk in olive oil until everything is well blended. Add shrimp and cover. Refrigerate 30 minutes to 1 hour to marinate.
      ½ cup olive oil, 2 pounds large peeled shrimp
    • Soak wooden skewers in water for at least 30 minutes before cooking.
    • Clean and oil the grill. Preheat to medium.
    • Thread 4-5 shrimp onto the skewers leaving plenty of space between.
    • Grill until shrimp is pink, about 3 or 4 minutes on each side. Serve immediately.
