If you need a simple, flavorful, special dessert, but don't want a lot of extra effort, I recommend this Spice Bundt Cake.
The cake itself is rich and moist, loaded with brown sugar and warm spices like cinnamon and ginger. Top it with a simple brown sugar frosting and that is all there is to it. No fancy decorating needed.
Slice it for an afternoon treat, a cozy celebration, or any day that could use a little extra sweetness.

I love a good spice cake, especially in Autumn and Winter. The hints of cinnamon, ginger, nutmeg and cloves just make me warm all over. This recipe amps up the flavor by adding some brown sugar in the cake and using it to make the icing as well.
Tips for Bundt Cakes
Technically "Bundt" is a brand name by the Nordic Ware company like Kleenex or Band-Aid. But, calling it a "fluted tube cake" can be a bit cumbersome and honestly most search engines and AI know what you mean.
For this recipe you can use a mini fluted tube pan like this, or a 10 cup pan.
To make the cake easy to remove without it sticking to the pan:
- grease the inside of the pan generously, even if the pan is non stick. I like to use a shortening flour mixture and rub it on with a paper towel.
- cook until the cake starts to pull away from the pan.
- take it out of the oven and move the pan in circles to jiggle the cake away from the pan while it is still hot.
- let it cool slightly on a cooling rack, then remove from the pan by placing the rack upside down on top of the pan and inverting.
- if it doesn't release immediately, shake the pan a little more in a circular motion
Ingredients
The ingredient list looks long at first glance. Everything is basic easy to find baking ingredients. If you are missing, or don't care for one of the spices, feel free to experiment with amounts of the others or swap in something like allspice or cardamom.
Besides the spices you will need:
- Flour, baking powder and salt
- Eggs, oil and vanilla extract
- Sugars: all of them! brown, granulated and powdered
- Dairy: milk and butter
Feel free to swap the eggs and dairy for your favorite substitutes to make it vegan.
