Do you need a quick and easy appetizer for your next party? These Tortilla Rollups are one of those wonderfully adaptable recipes that can be switched up to suit almost every taste and diet.
They whip up in minutes too! Perfect for entertaining this summer when you don't want to be stuck in the kitchen making appetizers (or lunch).
All you need to do is get your favorite tortilla, spread it with some cream cheese, then layer on the leaves, meats, cheese and vegetables of choice. Chill until serving time, then cut up and put on a serving plate.
Why aren't there any measurements?
Do you really need them? Add how much of what you want without it oozing out the ends when you roll it.
Basic Tortilla Rollups ingredients and adaptations
Start with flour tortillas or lavash. Chose gluten free, keto, high protein, vegan, etc. if you want. Use different flavors like spinach, garlic herb or sun dried tomato.
Cream cheese (vegan if desired) will help these hold their round shape better, but use mayonnaise, mustard, ranch dressing, pimento cheese, or other spread of choice if desired. You may need to hold the slices together with toothpicks .
Fill it with any vegetables, meats and cheeses you like. I have listed some in the recipe, as well as some possible combinations below.
Tortilla Pinwheels Combinations
Let your creativity, or your pantry/fridge contents, be your guide when making these. There is no "correct" way to make them. But, here are a dozen possible combinations to get you started:
- ham and swiss
- turkey and cheddar
- pesto and sun dried tomato
- hummus, spinach, feta, sun dried tomatoes
- ham, dill pickles, ranch dressing
- club sandwich (or BLT without the turkey): bacon, turkey, tomato, lettuce
- Mexican: mix taco seasoning in the cream cheese, plus cheddar cheese, bell peppers, cilantro, sliced or shredded chicken or beef
- Italian: salami, other Italian deli slices, provolone, pepperoncini or banana peppers
- Pizza: tomato tortillas, pepperoni, mozzarella
- Jalapeno Poppers: jalapenos, pepper jack cheese, bacon
- Southwestern: mix some Rotel with cream cheese, plus shredded chicken, cheddar cheese, black beans,
- Veggie ranch: mix ranch mix in the cream cheese, plus spinach, tomatoes, bell peppers, green onions
- Thai: mix peanut butter, chili garlic sauce and a little tamari (soy sauce), plus cucumbers and cilantro

Ingredients
- flour tortillas (gluten free or flavored if preferred)
- cream cheese at room temperature (vegetarian or vegan if desired)
- greens (lettuce, spinach, basil, etc)
- other fresh vegetables, sliced thin (tomatoes, onions, radishes, bell peppers, spicy peppers, mushrooms)
- canned or pickled vegetables (sun dried tomatoes, pickle slices or relish, jalapeno slices, roasted red peppers)
- meats and cheeses, sliced thin (turkey roast beef, ham, salami, pepperoni, cheddar, provolone, swiss, etc.)
Instructions
- Lay tortilla flat, spread with mayonnaise or cream cheese close to the edges. Layer the other desired ingredients, leaving a little room from the edge.
- Roll the tortilla, wrap in plastic and refrigerate at least one hour.
- Before serving, cut rolls into 1 to 1 ½ inch slices and place on a serving plate cut side down.
