Homemade pasta is delightful comfort food. It is also often laborious and time consuming. This semi-homemade Mushroom Goat Cheese Ravioli has a trick up it's sleeve for delicious homemade filled pasta taste in under 45 minutes.

Ravioli may sound intimidating to make, but with one simple trick they become ridiculously easy.
Instead of making pasta from scratch and cutting and folding them into little pockets, use wonton wrappers.
I got the idea from How to Cook Without a Book by Pam Anderson. It is a fun little book I picked up on the discount aisle of the grocery store that inspired me to simplify some of my day to day cooking processes.
From start to finish these took me about 30-40 minutes to make! Making this a lovely idea for a meatless Monday meal.
Fried (or Air Fried) Mushroom Goat Cheese Ravioli
Traditionally ravioli is boiled and served with some kind of sauce. Another is variation is to fry or bake them instead of boiling. They make a lovely appetizer served with the sauce on the side for dipping.
I do not deep fry very often, so I have not actually done this. But, the directions are pretty basic. After the ravioli are prepared, heat about 2 inches of oil in a skillet or pot (or deep fryer) to 325โ. Fry until golden brown, about 2-3 minutes.

Ingredients
- 1 packet wonton wrappers
- sauce for serving
Filling
- 1 ยผ cup goat cheese with italian seasoning
- ยผ cup grated Parmesan cheese
- ยฝ cup chopped mushrooms (canned or fresh mushrooms that have been sauteed)
- 2 cloves garlic (minced)
- 1 large egg
Instructions
- In a medium bowl combine all filling ingredients.
- Spread out wonton wrappers. Put one teaspoon of filling in the center of the wrapper.
- Wet the edges around the filling.
- Place a second wrapper on top and press to seal and remove any air pockets.
- Bring a pot of water to a boil. Slide ravioli into water gently (approximately 8 at a time). Let boil until translucent, about 3-4 minutes. Remove with slotted spoon, boil the remainder of the ravioli. Serve with sauce of your choice.
- For baked appetizers: use one wrapper per piece, placing the filling towards one side and folding in half. Spray with cooking spray or brush with oil and bake at 350โ until brown, about 3-4 minues per side.

Yes, the baked ones are crispy as if they were fried. Just spray them good (or brush with oil) and toast until your desired level of crispiness.
