Are you looking for a tasty twist to start your day off right? Get ready for some Avocado Pancakes. Yes, you heard that right, we are adding avocado to pancakes for a naturally green breakfast loaded with healthy fats and nutrients.
Perfectly ripe avocados are not just for toast anymore. So grab your spatula and get ready to elevate your breakfast game with these ridiculously good avocado pancakes.

If you have never tried avocados in anything other than guacamole this recipe probably horrifies you. But, avocado is actually mild tasting and works equally well in sweet dishes (like avocado pie) as it does in savory (like cucumber avocado soup ).
It's what you add to them that makes the difference. In this case it is basic pancake ingredients. The hint of sugar, maple syrup to be more accurate, in the pancakes is there to ensure browning. Otherwise they look pale and undercooked.
If you want to go savory and skip the traditional sweet toppings, serve them with some fried eggs and bacon or sausage, or maybe even some sausage gravy.
Why add avocado to pancakes?

First of all, avocados add a silky texture to the pancakes, which is really nice if you go with the whole wheat flour in the recipe below.

Why aren't Avocado Pancakes bright green?
In general, avocados are a bit on the pale side of the green food color spectrum (as opposed to dark leafy greens, for example). Once you mix them with the flour and milk they get a bit paler.
If you feel you must make them bright neon green, add food coloring. Just don't tell me. I prefer naturally colored food.
Ingredients for Avocado Pancakes
The ingredients are pretty obvious - an avocado and pancake ingredients. You could use a ready made pancake mix, but homemade is easy, tastes better and is better for you (plus it is politics-free!)
- avocado, fresh or thawed from frozen
- flour: all purpose, whole wheat, a combination of the two as below or gluten free
- dairy: yogurt and milk, or buttermilk or dairy free substitute
- egg or egg substitute
- butter or coconut oil
- maple syrup, honey or agave syrup (or sugar)
- vanilla extract
- baking powder and soda
Mix in blueberries or chocolate chips. Top it with your favorite pancake toppings.
For gluten free pancakes use gluten free flour. To make dairy free pancakes use dairy free substitutes. For vegan pancakes use dairy free milk and a vegan egg substitute.

Ingredients
- ½ cup plain or vanilla Greek yogurt
- ¼ cup milk (dairy, nut milk, etc.)
- 1 large egg
- 1 ½ tablespoons maple syrup (or honey or agave syrup)
- 1 tablespoon melted butter or butter flavored coconut oil
- 1 teaspoon vanilla extract
- 1 ripe California avocado (peeled and pit removed)
- ½ cup all-purpose flour
- ¼ cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- In a blender or food processor, combine yogurt, milk, egg, maple syrup, coconut oil and vanilla with a few quick pulses.½ cup plain or vanilla Greek yogurt, ¼ cup milk, 1 large egg, 1 ½ tablespoons maple syrup, 1 tablespoon melted butter or butter flavored coconut oil, 1 teaspoon vanilla extract
- Add avocado and puree until completely blended.1 ripe California avocado
- Add flours, baking powder and soda. Pulse a few times until blended½ cup all-purpose flour, ¼ cup whole wheat flour, 1 teaspoon baking powder, ½ teaspoon baking soda
- Cook on a griddle over medium high heat. Serve with your favorite pancake toppings.
