    Homemade Whole Wheat Bread Ready in One Hour!

    When I need a loaf of bread quickly this is my go to recipe. It really does take about an hour from start to finish. Which is pretty awesome considering most yeast breads have to rise for twice as long as that.

    A few notes:

    1. I used 100% whole wheat flour, not all purpose or bread flour or whole wheat bread flour.
    2. I used active dry yeast, not Rapid Rise or Breadmaker yeast
    3. The downstairs thermostat was set at 72 and I placed the loaf near the already warm oven.

    Changing any of the above factors could make it rise faster or higher, which isn't a bad thing, you just want to keep an eye on it during the rising phase so it doesn't ooze over the top of your pan.

    One Hour Whole Wheat Bread

    Ingredients
     

    • 1 ½ cup warm water (approximately 100 degrees)
    • 2 ¼ teaspoons active dry yeast (1 package)
    • 1 teaspoon honey or molasses
    • 2 ⅔ cups whole wheat flour
    • ¾ teaspoons salt

    Instructions
     

    • Grease one loaf pan. Preheat oven to 400 degrees.
    • Add yeast and honey to warm water and let sit for a few minutes to proof (get white and foamy on top).
    • Combine flour and salt in a large bowl, add liquid and stir, no kneading. The batter will be soft and should stick to the spoon a bit when you lift it out.
    • Put into loaf pan and place in a warm place to rise until dough reaches the top of the pan (20-30 minutes).
    • Bake for 15 minutes, reduce heat to 350 and bake for another 15 minutes. Remove from oven and cool for 5 minutes then remove loaf from pan.

    This recipe has been modernized from one by Rosalie King (wife of Congressman David King of Utah) in The 1961 edition of The Congressional Club Cookbook.

      This sounds wonderful! I HAD a bread machine given to me years ago that I never used. Now I can't find it, and I want home baked bread. I will have to give this a try. Got anything for white bread?? 🙂

      I haven't baked bread in years I used to do it all the time in my late teens. This recipe sounds familiar. My husband is the bread baker nowadays - and we always seem to be too busy. I'll have to give this recipe to him. Thank you for sharing.

      Tamara, I am going to give this a try with unbleached all purpose flour later in the week. There was a loaf of sourdough on the day old rack today that was calling my name, so I don't need any more bread at the moment. If you try it, let me know how it comes out. From past bread making experience the all purpose flour or even better yet bread flour should make it rise faster/higher because it has more gluten.

      SO trying this! I usually buy bread from a nearby Amish bakery but they're closed between Christmas and Easter so I'm on my own. Looks great and I love that you said it was moist. (And fast!)
